Corn pulav and Baigun bhaja

Vegetable Pulav/Pulao is a one pot meal in which long grain rice cooked with mix of vegetables and flavored with spices.Pulao is perfect for bachelors/kids.Pulao is healthy and delicious dish ,also it can customized with favorite vegetables.Corn pulav is healthy,delicious  meal.Brinjal   is popular vegetable in Asia. Brinjal is low calorie and high fiber vegetables. Brinjal(Baingan)  cooked in  lots of way in Asian countries.Baingun Bhaja is very easy recipe it can make within 10 minutes and enjoy with rice/roti or as a starter.

Ingredients(Serving-2)


For Baingun Bhaja-

  • Aubergines/Brinjal/ large eggplant( Baingun)-1
  • Red chili powder-1/2 tsp
  •  Turmeric powder-1/2 tsp
  • Roasted gram flour-1 tbsp
  • Coriander powder-1 tsp
  • Mango powder-1/2 tsp(Optional)
  • Sesame seed-1 tsp
  • Cumin powder-1 tsp
  • Cooking oil 3 tbsp
  • Salt-1/2 tsp to taste
  • Garam masala-1 tsp
  • Coriander leaves-1 tsp for garnishing

For Corn Pulav-

  • Basmati rice-1 cup
  • Water -2 cup
  • Bay leaves2-3
  • Salt – 1/2tsp(to test)
  • Cashew nut – 4 to 6
  • Cooking oil/Ghee – 2 tbsp
  • Black peppercorns-1 tsp
  • Green cardamom-2-3
  • Clove-2-3
  • Ginger garlic paste-1 tsp
  • Tomato-1/2cup chopped
  • Cumin seed – 1 tsp
  • Star anise-1
  • Green chili – 2 finely chopped
  • Onion-1 /2 cup chopped
  • Cauliflower-2-3 small pieces
  • Fresh corn karnel-1 cup
  • Mint leaves-for garnishing

    Method


    Step 1 – For Baingun Bhaja-Wash large eggplant and cut into slice,keep all slice on bowl of water.In a small bowl  mix all spices,keep aside.

    Step 2 –Heat nonstick pan and add 2 tbsp oil.roll out brinjal slice on spice mixture and slide in hot oil cook 2-3 minutes in high flame then turn cook other side 2-3 minutes till both side get crispy.Garnish with coriander leaves and serve hot .

    Step 3 – For Corn Pulav- Wash and soak rice for 30-45 minutes.  
    Step 4– Heat 2 tbsp oil/ghee  in a nonstick pan add cumin seed when seed crackle, add bay leaf,peppercorn,green cardamom,star anise,clove,cashew nut, stir for 20 seconds,add chopped onion saute it 1-2 minutes ,add green chili stir it,add  ginger garlic paste mix it  for 10 seconds,add cauliflower,corn kernel mix it, saute it for 1 minute, add salt,coriander powder mix it 1 minutes.

    Step 5- Add rice and mix it gently, cook 1-2 minutes so rice coated with spices .Add 2 cup water,lemon juice, mix it again.Cover with lid and cook in medium flame for5-6 minutes(till grains softer and separated) .Remove from heat after 10 minutes open lid and garnish with mint leaves. Serve hot  with Baingun Bhaja .
