Three breakfast recipes with one batter

South Indian cuisine includes the cuisines of the five southern states of India -Andhra Pradesh, Karnataka, Kerala, Tamil Nadu and Telangana and the union terriories of Lakshadweep, Pondicherry, and the Andaman and Nicobar Islands. The similarities among the five states cuisines include the presence of rice as a  staple food, the use of lentils and spices.Batter made by Soaking rice and black lentils(de- husked), grinding, then fermenting .From fermented batter can make three popular breakfast food 1-Idli soft savoury  cake, 2-Dosa-type of savoury crepes, 3-Uttapam- type of savoury thick pancake topped with vegetables. Batter

Ingredients

  • Urad dal – 2 cup
  • Rice flakes-1/2 cup
  • Rice -4 cup
  • Fenugreek seed-1 tsp
  • Salt – 1/2 tsp
  • Sugar – 1/2 tsp
  • Baking soda – 1/2 tsp
  • cooking oil-2 tbsp

Method


Step 1 – Wash and soak rice for 6-8 hours with sufficient water.Mix urad dal and fenugreek seed and wash it  and soak  for at least 6- 8 hours  in lots of water.

Step 2 – In grinder take dal  and  grind, make smooth fine batter (you can add 2-3 tbsp water) .Grind rice and rice flake( wash and soak just 30 minutes before grinding) together and make smooth batter not very fine.

Step 3 – Take both batter in bowl and mix for 5-7 min then add salt,sugar,baking soda, cooking  oil and mix again 7-10 minute, cover it proper and keep the   batter for fermentation for 8-10 hours.

Step 4 – After  fermentation  batter will become double.Batter is ready for idli,dosa and uttapam.

Soft steam Idli

Ingredients

  • Batter
  • Cooking oil-1tbsp
  • For tempering(optional)
  • Mustered seed-1/2 tsp
  • Cumin seed-1/4 tsp
  • Whole  dry red chili-1
  • Curry leaves-6-7 leaves

Method


Step 1 – Take steamer /pressure cooker and heat it, grease idli molds and pour 1-2 tsp batter in each idli molds , fill all molds , place idli molds in steamer /pressure cooker and steam idli for8-10 minutes.

Step 2 – After 8-10 minutes take out idli mold and cool it for 1-2 minutes and remove idli from mold with the help of greased knife. Keep idli on bowl and cover it.

Step 3– Heat 1 tbsp oil in pan add mustard seed when seed crackle add cumin seed and curry leaves,whole rad chili cook 20 second remove from heat and pour in idli.Serve fluffy  idli with coconut chutney and sambar.

NOTE.

  • Do not overcook idli or else it will become dry.
  • It is no fail recipe for idli. Please follow all instructions very carefully and enjoy mouth melting fluffy idli.

Spicy cottage cheese filling spinach dosa

Dosa is popular breakfast in the south Indian cuisines.  This is thin crispy  and can be made with different filling like potato masala, paneer masala, vegetable etc.

Ingredients

  • Batter
  • Cooking oil-1tbsp
  • Spinach leaf-1 cup
  • Garlic-2
  • Cottage cheese filling-
  • Cottage cheese(Paneer)-1/2 cup
  • Red bell paper-2 tbsp finely chopped
  • Green peas-2 tbsp
  • Onion-2 tbsp finely chopped
  • Tomato sauce-1 tbsp
  • Black paper powder-1/2 tsp
  • Salt1/2 tsp
  • Cumin seed-1/4 tsp
  • Coriander leaves-2 tbsp finely chopped
  • Cooking oil-2 tbsp
