Top Three Popular Millet Recipes

Millet are most digestive , gluten free, super grains. It is good for all age (toddlers, kids, adults) group . It is good source of fiber, protein, amino acid, antioxidants . Nutty flavor and soft texture makes is good for breakfast/ side dish /meal. It can cook lots of ways.According to taste variety of vegetables, spices,sauces can add  and make millet delicious  for everyday meal. here is very easy and healthy three recipes:

1-Curd Millet

Curd Millet is delicious, healthy, meal originated from South Indian States of Tamil Nadu ,Karnatka, Kerla, Andhra Pradesh.  It is made with cooked millet and curd then tempered to roasted with  urad dal,  and little spices. This needs very few ingredients but tastes amazing and also very good for kids.

Ingredients


  • Millet – 1/2 cup
  • Urad dal – 1 tsp
  • Salt – 1/2tsp(to test)
  • Olive oil – 1 tbsp
  • Mustard seed – 1 tsp
  • Cumin seed – 1 tsp
  • Green chili – 1 finely chopped
  • Curry leaves – 7 to 8
  • Whole dry red chili – 1 to 2
  • Black peppercorn-1/2 tsp
  • Cucumber-2 tbsp grated
  • Coriander leaves-1 tbsp finely chopped

Method


Step 1 -Wash millet 2-3 times with water.

Step 2 – Pressure cook 1 cup millet, 2 cup water with 2 whistles and  more 2-3  minutes in low flame. Cool millet and keep aside.

Step 3 -Take cooled rice in a bowl and add salt, grated cucumber, chopped green chili, curd and mix well.

Step 4 – Heat 1 tbsp oil  in a nonstick pan add mustard seed when seed crackle add urad dal,  roast until it becomes brown. Add cumin seed, whole red chili,  curry leaves, pour this tempering into millet  and mix it. Serve it fresh.


2-Raw mango Millet

Raw mango millet  made with several way,some people use mango paste ,some people use grated mango .Here is easy recipe of mango millet which is  offering in many temples to god and it is also good in hot summer.

Ingredients


  • Millet – 1 cup
  • Chana dal – 1 tsp
  • Urad dal – 1 tsp
  • Salt – 1/2tsp(to test)
  • Cooking oil – 1 tbsp
  • Mustard seed – 1 tsp
  • Cumin seed – 1 tsp
  • Green chili – 1 finely chopped
  • Curry leaves – 7 to 8
  • Whole  red chili – 1 to 2
  • Garlic-1 tbsp chopped(optional)
  • Fresh raw grated mango–1 cup
  • Raw mango slice-for garnishing

Method


Step 1 -Wash millet 2-3 times with water,keep aside. In blander take raw mango, green chili, garlic, and make fine paste , keep aside.

Step 2 –Heat pot add 1 tsp oil ,add cumin seed when seed crackle add millet ,salt and 2 cup water mix it, Cover it, cook 6-7 minutes till millet absorbed all water. Remove from heat and cover it for 10 minutes .

Step 3– Heat 1 tbsp oil  in a nonstick pan add mustard seed when seed crackle add urad dal, roast until it becomes brown. Add  curry leaves, red chili, mango paste roast it it 1-2 minutes,add little salt mix well  add cooked millet mix well cook 2-3 minutes so rice coated with spices. Remove from heat garnish with mango slice and serve it.

3-  Millet with stir fry tofu and bell paper

 Stir fried millet with  lots of vegetables delicious,  healthy  and quick meal.

Ingredients


    • Millet-1 cup
    • salt-1/2 tsp
    • Garlic-1 tsp,chopped
    • Onion – 2 tsp, finely chopped
    • French beans-1 tbsp, finely chopped
    • Cabbage –1tbsp, Finely chopped
    •  Light Soy sauce – 2 tsp
    • White pepper powder – 1 tsp
    • Lemon juice – 1/2 tsp
    • Capsicum red,yellow – 1 tbsp finely chopped
    • Tofu-2-3 pieces
    • Coriander leaves-1 tsp finely chopped
    • Olive oil-2 tbsp

Method 


 

Step 1 -Wash millet 2-3 times with water,keep aside.

Step 2 –Heat pot add 1 tsp oil ,add cumin seed when seed crackle add millet ,salt and 2 cup water mix it, Cover it, cook 6-7 minutes till millet absorbed all water. remove from heat and cover it for 10 minutes .

Step3- heat nonstick pan add 1 tbsp olive oil  in high flame saute vegetable, garlic, onion one by one,add tofu saute it ,add soya sauce ,white pepper powder mix it.Add cooked millet and mix well. remove from heat add lemon juice and coriander leaves serve hot.
