Jackfruit is commonly used in South and Southeast Asian cuisines. The jackfruit tree is a widely cultivated and popular food items throughout the tropical regions of the world . Jackfrut is good for digetion, energy, skin, bone, eyesight, heart. It prevents anemia, maintain thyroid. Jackfruit has distinctive sweet and fruity aroma. Young unripe jackfruit is used as a vegetable to make spicy curries and side dishes, cutlets.
1/ Jackfruit Kabab
Ingredients-( 5 servings)
- Jackfruit-1 cup
- Chickpea flour-1/2 cup
- Salt-1/2 tsp
- Coriander powder – 1 tsp finely chopped
- Cumin powder – 1 tsp
- Red chili powder-1/2 tsp
- Black paper powder – 1/2 tsp
- Garam masala-1/2 tsp
- Pomegranate powder-1 tsp
- Coconut grated-2 tbsp
- Green chili-coriander-garlic paste-1 tbsp
- Oil-2 tbsp
Method
Step3-Make small ball from jackfruit mixture and flatten it little. Roll it on grated coconut,keep aside.
Step4- Heat non stick pan add 1 tbsp oil and place jackfruit kabab cook it in low medium flame for 4-5 minutes .Turn it an cook other side 3-5 minutes till golden brown. Remove from heat and serve as appetizer/snack/ side dish.
2/ Jackfruit fry
Ingredients(Serving-2)
- Jack fruit- 1/2 cup unripe,cleaned, chopped
- Bay leaf-2-3
- Salt – 1/2tsp(to test)
- Cooking oil – 2 tbsp
- Garlic -red chili paste-1 tbsp
- Cherry tomato-1-2
- Cumin seed – 1 tsp
- Coriander powder-1/2 tsp
- Cumin powder-1/2 tsp
- Roasted gram flour-1/2 tsp
- Garam masala-1/2 tsp
- Onion-1 /2 cup grated
- Jack fruit-1/2 cup chopped
- Coriander leaves for garnishing
Method
Step1-Boil 3 cup water in a pot, add salt ,jack fruit and cover it cook3-5 minutes till soft, keep aside. Step 2– Heat 2 tbsp oil/ghee in a nonstick pan add cumin seed when seed crackle, add bay leaf, grated onion cook it 2-3 minutes , garlic paste mix it for 10 seconds, add jack fruit mix it, cook it for3-5 minute, add salt,roasted gram flour, coriander powder, cumin powder, mix it, add cherry tomato mix it cook 3-4 minutes in medium flame,add garam masala coriander leaves mix it
3/ Jack fruit Biryani
Jack fruit biryani is one of the most aromatic, spicy, delicious ,exotic rice based dish. Jackfrut biryani can make two ways-In first method 70 percent cooked rice use and make biryani with spicy jackfruit.Second method soaked rice cooked with spices and jackfruit. In second method is more aromatic and flavorful.Here is recipe-
Ingredients(Serving-2)
- Basmati rice-1 cup
- Water -2 cup
- Bay leaves2-3
- Salt – 1/2tsp(to test)
- Cashew nut – 4 to 6
- Cooking oil – 2 tbsp
- Black peppercorns-1 tsp
- Green cardamom-2-3
- Clove-2-3
- Ginger garlic paste-1 tsp
- Cherry tomato-2-3 cut in to half
- Cumin seed – 1 tsp
- Star anise-1
- Green chili – 2 finely chopped
- Onion-1 /2 cup chopped
- Jack fruit-1/2 cup chopped
- Green pea-1/2 cup
- Lemon slice for garnishing
- Onion slice for garnishing
Method
Step 1 – Wash and soak rice for 30-45 minutes, keep aside. Step2-Boil 3 cup water in a pot, add salt ,jack fruit and cover it cook3-5 minutes till soft, keep aside. Step 3– Heat 2 tbsp oil/ghee in a nonstick pan add cumin seed when seed crackle, add bay leaf, peppercorn, green cardamom, star anise, clove, cashew nut, stir for 20 seconds,add chopped onion saute it 1-2 minutes , add green chili stir it,add ginger garlic paste mix it for 10 seconds,add jack fruit mix it,cook it for 2-3 minute, add salt, coriander powder,cherry tomato,green pea, mix it cook 1 minutes. Step 4- Add rice and mix it gently, cook 1-2 minutes so rice coated with spices .Add 2 cup water, lemon juice, mix it again.Cover with lid and cook in medium flame for 5-6 minutes(till grains softer and separated) . Remove from heat after 10 minutes open lid and garnish with mint leaves. Serve hot with curd.

Lovely recipes . Reading this ,I am also reminded of Jackfruit Halwa. Tastes awesome . It does take a little effort and time but tastes truly awesome .
