Soup is a primary liquid food . Soup are served before meal to improve digestion. Pumpkin soup is very silky soft healthy soup made with fresh sweet pumpkin and flavored with pungent,spicy ginger .
Ingredients ( servings-2)
- Pumpkin-2 cup chopped
- White paper powder-1 tsp
- Salt-1/2 tsp,to taste
- Sugar-1/2 tsp,optional
- Ginger grated-1,2 tsp
- Garlic-2 tsp
- Olive oil-1 tbsp
- Fresh cream/yogurt- 2 tbsp optional
- Thai red chili fresh-1/2 tsp
- Pumpkin seed-2 tbsp
Step 1–Add oil in dip nonstick pan, add chopped garlic,ginger and cook just 20 seconds, add chopped pumpkin and cook 4-5 minutes, add sugar, salt,white paper powder mix it,add 2-3 cup hot water and cook 8-10 minutes remove from heat and cool it for10 minutes.
Step2-In grinder take cooled pumpkin mixture and grind well.With the help of strainer strain it and collect puree.
Step3-In same pan add pumpkin puree boil it cook more 3-4 minutes till soup get perfect consistency.Pour pumpkin soup in bowl add 2 tbsp fresh cream / 2 tbsp yogurt/1 tbsp fresh cream and 1 tbsp yogurt .Garnish with pumpkin seed and fresh Thai red chili.
