Muffins is individual sized, quick baked bread. Muffins are typically eaten as a breakfast food. Combination of banana and juicy blueberry make muffin healthy, and also kids friendly.I made banana blueberry muffins with sweetened condensed milk.Condensed milk makes muffins rich creamy .Banana blueberry muffins is perfect with tea/coffee.
- All purpose flour – 1.5cup
- Baking powder – 1/2 tsp
- Salt – 1/4tsp/1 pinch
- Bananas-4 small
- Blueberry-1 cup
- Olive oil – 3 tbsp
- Condensed milk-1/2 cup
- Milk(warm)- 1/2 cup
- Baking soda- 1/2 tsp
- Lemon juice – 1 tsp
- Vanilla essence – 1 tsp
Step 1 – Preheat oven to 350F/180C for 10 minutes. Line muffin tray with parchment paper.
Step 2 – In bowl take mashed banana, olive oil, condensed milk, lemon juice, mix well till fluffy.Add vanilla essence and keep aside.
Step 3 – Sieve flour, salt, baking soda, baking powder in a separate bowl.
Step 4 – Add dry mixture into wet mixture and mix until just combined , add little milk and mix ( do not over mix batter).
Step 5 – Pour 2-3 tbsp batter on lined muffin tray and put some blueberry on top of batter.
Step 6 – Place muffin tray on oven bake it 20-25 minutes till it becomes golden brown. Check with toothpick inserted in center of muffin comes out clean.
Step 7 – Cool it for 10 minutes. Enjoy your healthy, delicious, fluffy Banana blueberry Muffins !!!!!!
