Semolina is also known as Rawa/Sooji. It is coarse,purified wheat middlings of durum wheat .Semolina is good for diabetics, weight loss, energy, good source of iron, antioxidants.It improves kidney function due to its potassium content. Also contain higher amount of protein and fiber. Here is some easy breakfast/snack recipes of semolina
Semolina Dhokla
Dhokla is healthy, delicious, breakfast/Snacks. It is perfect for kids lunch box.Spongy, soft steam cake can make microwave or steamer both are delicious.
Ingredients( servings-4)
- Semolina-1cup
- Lemon juice-1 tsp
- Salt-1/2 tsp
- Sugar-1 tsp
- Baking soda-1/2 tsp
- Curd-1/2 cup
- Eno fruit salt-1 tbsp
- Water-1 cup,lukewarm
- cooking oil-1 tbsp
For tempering-
- Cooking oil-2 tbsp
- Mustard seed-1/2 tsp
- Cumin seed-1/2 tsp
- Curry leaves-3-4
- Green chili-1 tsp finely chopped
- Coriander leaves-1 tbsp finely chopped
Method
Step 1 – In large bowl semolina, sugar, salt,lukewarm water and oil,curd , mix it well make smooth batter, add lemon juice, baking soda mix well again cover it for 1 min.
Step 2 – Grease 1 little deep plate or thali .
Step 3 – Add eno fruit salt, 1 tsp lukewarm water in batter mix quickly and pour batter in greased plate, spread properly, keep plate in steamer and cook dhokla for 8 minutes.
Step 4 – After 8 minutes check dhokla with toothpick, when comes out clean dhokla cooked. Take out dhokla from steamer.
Step 5 – Cover dhokla thali with any plate and invert thali and keep aside for 10 minutes.
Step 6-For tempering- heat1 tbsp oil in a pan add mustard seed,when seed crackle add cumin seed,curry leaves, green chili saute for 30 second, remove from heat.
Step 7-Pour the tempering over the steam cake, garnish with chopped coriander leaves cut into pieces (I cut into heart shape) serve with any chutney/tomato sauce.
Semolina vada
Semolina vada is one of the quick vada recipe ,it is healthy and perfect for lunch box/as appetizer/ as snacks .
Ingredients (Serving- 10)
- semolina – 1cup
- curd-1/2 cup
- Cumin seed – 1/2tsp
- Coconut pieces – 1tbsp(finely chopped)
- Salt – 1tsp(to taste)
- Curry leaves – 5 to 7(finely chopped)
- Green chili-1 tsp finely chopped
- Cooking oil – For deep frying
- Coriander leaves-1 tbsp finely chopped
- Onion – 1 /2 cup finely chopped
Method
Step 1- Mix all ingredients in a bowl(except cooking oil) , cover it and keep aside for 10-15 minutes.If need add little water.
Step 2 – Heat oil for frying on medium hot oil, take small lemon size ball in palm and make hole in the center with finger and give doughnut shape.
Step 3 – Slid the vada in hot oil fry in low medium flame until both side crispy and golden brown.
Step4 – Take out vada and keep in tissue paper and fry all vadas in similar way.Serve with any type sauce/yogurt .
