Flat fluffy leaf/heart shaped fresh herb, olive French bread is perfect for table bread, appetizer, snack.It is very similar to Italian focaccia. In Fougasse recipe dough knead with fresh herbs and dough fold with semolina. Kneading , folding and resting of dough makes it fluffy texture.
- Multigrain flour – 1.5cup
- Yeast – 1 tsp (instant)
- Salt – 1/2 tsp
- Semolina and flour -for dusting
- Sugar – 1 tsp
- Mix Italian herbs( dry rosemary,thyme,basil,oregano) – 2 tbsp
- Fresh rosemary-2 tbsp
- Olive oil-3 tbsp
Step 1 – In bowl take lukewarm water, sugar, yeast and mix then keep aside for 5 minutes.
Step 2– Take flour in one bowl. Add salt, and yeast mixture, mix it and knead for 5 minutes then add olive oil,fresh rosemary and knead 10 minutes. Cover dough and keep aside for 1 hour.
Step 3 –After 1 hour when you open dough it will be almost double/triple in size. Punch it knead for 5-8 minute/fold 6-7 times with little olive oil and cover it for 45 minutes. Cut dough to two parts and flatten it oval/leaf/heart shape. Use dough scraper and give 9 slit(1 straight cut in middle and 4 diagonal cuts on the opposite side). Gently stretch the dough to open up the holes. Keep in baking tray(dust with some flour and semolina) and cover it with cling film.Keep aside for 1 hour.
Step 4 – Preheat oven to 350f/180c for 10 minutes.
Step 5 – After 1 hour drizzle olive oil and Italian herbs, Cover the dough for 10 minutes. place baking tray in preheat oven 180c for 20-25 minutes till upper surface and all sides becomes brown. Take out Fougasse from baking tray ,brush with little olive oil and serve hot .
