Spring onions are good source of vitamin and fiber.Spring onion paratha made with spring onion , wheat flour and some spices . It is very healthy ,delicious and good option for breakfast/lunchbox/meal.Pumpkin is also good source of vitamin and fiber. Pumpkin Raita is very simple and quick recipe ,it can serve with any parathas/roti/rice.
Ingredients-(4 servings)
For Spring Onion Paratha-
- Whole wheat flour-2 cup
- Gram flour- 2tbsp
- Salt – 1/2 tsp to taste
- Red chili powder – 1/2 tsp
- Mango powder-1/2 tsp
- Black paper powder – 1/2tsp
- Cumin powder- 1/2 tsp
- Green chili -1/2 tsp finely chopped
- cooking oil/butter-2 tbsp
For Pumpkin Raita-
- Pumpkin grated-1 cup
- Yogurt-1 cup
- Curry leaf-6-7 leaves
- Mustard seed-1/2 tsp
- Green chili-1 tsp finely chopped
- black salt-1 pinch
- Almond powder-1 tbsp
- salt-1,2 tsp
- cumin powder-1/4 tsp
- black paper powder-1/4 tsp
Method
Step 1 – Take both flour in a bowl, add 1 tsp oil, salt,all spices and make soft,smooth dough with water (knead 10 minutes),cover it and keep aside for 5 minutes.
Step 2 – Take lemon size ball from dough and roll on dry wheat flour.Roll out ball with help of rolling pin make 6 inch circles or give any shape (I use pancake tools).

Step 3– Heat nonstick tava(griddle) and add 1tsp oil/butter place paratha and cook in low medium flame when the paratha begin start puff up flip it gentle apply little oil/butter on paratha and flip paratha again,apply oil/butter and cook proper in both side 3-4 minutes. Make all parathas similar way.
Step 4 –For Pumpkin Raita-Heat1 tsp oil in a pan add grated pumpkin and cook 2-3minutes till soft. Cool it and keep it aside
Step 5 – Whisk curd in a bowl,keep aside.
Step 6 – Take a large bowl and add cooled pumpkin,cumin powder,black paper powder,salt,black salt,and mix it properly then add whisk curd.
Step7-Heat 1tsp oil in a pan add mustard seed when seed crackle add chopped green chili and curry leaves.
Step 8 –Add tempering into curd mixture and mix well .
