Corn Paratha with Pumpkin Raita

Corn Paratha  is best way to take corn in meal/breakfast.Corn paratha can make  two way.First method , make dough with corn paste, spices and make parathas and second method  make normal paratha dough , stuff with spicy corn paste .Make dough with corn paste is  light compare to stuff corn paratha.Pumpkin  is also good source of vitamin and fiber. Pumpkin Raita is very simple and quick recipe  ,it can serve with any parathas/roti/rice.

Ingredients(4 servings)

For Corn Paratha-

    • Whole wheat flour – 1 cup
    • All purpose flour-1/2 cup
    • Salt – 1/2 tsp to taste
    • Oil – 1 tsp
    • Cumin seed-1/2 tsp
    • Black pepper powder-1/2 tsp
    • Sweet corn paste( fresh)-1 cup
    • Garlic-3-4cloves
    • Green chili-1-2 chopped
    • Lemon juice/-1/2 tsp
    • Salt-1/2 tsp
    • Cooking oil/butter/clarified butter-for cooking

For Pumpkin Raita-

    • Pumpkin grated-1 cup
    • Yogurt-1 cup
    • Curry leaf-6-7 leaves
    • Mustard seed-1/2 tsp
    • Green chili-1 tsp finely chopped
    • black salt-1 pinch
    • Almond powder-1 tbsp
    • salt-1,2 tsp
    • cumin powder-1/4 tsp
    • black paper powder-1/4 tsp


Step 1-Take corn kernel and make fine paste in grinder( if need ,strain it and collect cream puree)Keep aside.

Step 2 – Take  both flour,salt,1 tsp oil,all  spices,lemon juice ,knead 2-3 minutes make tight dough cover it keep aside for 10 minutes.

Step 3– After 10 minute take  lemon size ball from dough ,rolled in dry flour and flatten it with help of rolling pin(I cut it with cutter for heart shape).

Step 4 – Heat nonstick griddle and place paratha and cook in low medium flame when the paratha start puff up ,flip it gentle.Apply some butter/ghee/oil and cook proper in both side .

Step 5 –For Pumpkin Raita-Heat1 tsp oil in a pan add grated pumpkin and cook 2-3minutes till  soft.  Cool it and keep it aside

Step 6 – Whisk curd in a bowl,keep aside.

Step 7 –  Take a large bowl and add cooled pumpkin,cumin powder,black paper powder,salt,black salt,and mix it properly then add whisk curd.

Step8-Heat 1tsp oil in a pan  add mustard seed when seed crackle add  chopped green chili and curry leaves. 

Step 9 –Add tempering into curd mixture and mix well .

Enjoy this healthy Pumpkin Raita with Corn Paratha.
