Avocado and Raspberry Ricotta Ice cream

Ice cream is a frozen dessert  usually made from dairy products. Rich creamy, super delicious,soft. It is very easy to make in very short time   and perfect dessert for everyone( specially kids).Avocado  and Raspberry ice cream is made with fresh Ricotta cheese,hung curd.It is super delicious,healthy,easy to make and perfect for kids .

Ingredients (for 2 serving)


  • For Raspberry Ice cream
    • Ricotta Cheese  (homemade) – 200 grams/1 cup
    • Hung curd(homemade) – 1/2 cup
    • Salt –1 pinch
    • Raspberries(Fresh)-1 cup
    • Vanilla extract-1 tsp
    • Sugar-1/2 cup
    • cashew nut-6-7 pieces(Soaked in water for30 minutes)
    • Lemon zest  grated-1/2 tsp(optional)
  • For Avocado Ice cream
    • Ricotta Cheese  (homemade) – 200 grams/1 cup
    • Hung curd(homemade) – 1/2 cup
    • Salt –1 pinch
    • Avocado fresh -1 cup(mashed)
    • Sugar-6 tbsp
    • Vanilla extract-1 tsp
    • Cashew nut -6-7pieces(Soaked in water for 30 minutes)
    • Lemon zest  grated-1/2 tsp(optional)

Method


Step 1 –Take sugar,in a grinder make powder. Add fresh ricotta,hung curd,vanilla extract,lemon zest,salt,cashew nut, grind it 3-4 minutes.Place mixture into the container.

Step 2 – In grinder take roughly chopped raspberries grind it 30 seconds.Pour  it on container fold it gently .Keep container in freezer to set for minimum 4-5 hours.

Step 3 –Take 4 tbsp sugar,in a grinder make powder. Add fresh ricotta,hung curd,vanilla extract,lemon zest,salt,cashew nut, grind it 3-4 minutes.Place mixture into the container.

Step 4– In grinder take mashed avocado,lemon juice,2 tbsp sugar grind it 30 seconds.Pour  it on container mix it gently .Keep container in freezer to set for minimum 4-5 hours.

Enjoy delicious Avocado and  Raspberries  ice cream!!!!!!!

    Almost great.. have you ever tried making these without any sugar or artificial sweeteners?? Interested to know if it can work? I live a LCHF lifestyle and always look for alternatives to the normal sugar/ carb loaded products on the market! 😉

    This is really good to see Avacado ice cream. Since, me and my husband are really tired to think that how to eat this fruit has almost no taste. Now we just eat it with salad sprinkeling lemon and salt as it is good for health.
    It will be really helpful if you share more receipeis of Avacado.
