Kachori is popular snack in India. Kachori is deep fried crispy,flaky poori stuffed with spicy flavored lentil stuffing.
Ingredients (For 6 pieces)
- All purpose flour – 1cup
- Semolina – 1tsp
- Baking soda-1/2 tsp
- Water – 1/2 cup
- Salt – 1/2 tsp
- Yellow moong dal-1/2cup(wash and soaked in water for 1 hour)
- Gram flour-3-4 tbsp
- Whole coriander seed – 1tsp
- Cumin seed – 1tsp
- Funnel seed powder – 1 tsp
- Red chili powder-1tsp
- Date tamarind chutney-2 tsp
- Coriander powder-1 tsp
- Cooking oil – For deep frying
Method
Step 1-Take all purpose flour, semolina,baking soda in a bowl. Add 2 tbsp oil, salt and mix it proper then make semi stiff dough with the help of hot water. Cover it with damp cloth and keep aside for 5 minutes.
Step 2 – In nonstick pan add 1 tsp oil add cumin seed when seed crackle add coriander powder,red chili powder, fennel seed powder,salt, mix it.Add soaked moong dal with 2-3 little water cook 3-4 minutes till dal cooked and absorbed all water ,add gram flour mix it cook 2-3 minutes add tamarind chutney and mix well cook 2-3 min in low flame.remove from heat and cool it completely.Make small lemon size ball from stuffing and keep aside.
Step 3– Take small boll from dough and make small poori with the help of rolling board and pin. Put 1 stuffing ball on center of puri and seal all sides, edges and close it proper.Press with hand and flatten it make small poori. Make all in similar way.
Step 4 – Heat oil for frying on medium hot oil and place kachori on pan and cook in low medium flame,When kachori puffed up completely( it will take7-9 minutes) ,turn with spoon /fork and cook other side6-7 minutes.Cook until golden crispy in both side
Step 5 – Take out kachori ,drain on an tissue paper. Cool and serve with Curd ,tamarind chutney.
