Stuffed Lady Finger(Okra)

Lady Finger is popular  in  some Asian countries. Due to high fiber and nutritional benefits it is used as meal/side dish/starter.In India  every house hold their ,own recipe  for Lady finger (Bhindi/Okra) .Bhindi masala,Bhindi in yogurt gravy,stuffed Bhindi,lady fingers fritters,Bhindi do pyaza.Stuffed lady finger is made with roasted gram  flour,sesame seed,fresh coconut,and spices.Stuffing makes lady finger crunchy, inside also and it is perfect for lunch box.

 

Ingredients( 2 servings)


  • Lady Finger-10-12 pieces
  • Garlic -1 tsp grated
  • Red chili powder-1 tsp
  •  Turmeric powder-1/2 tsp
  • Sesame seed-1/2 tsp
  •  Peanut-2 tbsp
  • Gram flour-2 tbsp
  • Corianderpowder-1tsp
  • Cumin seed-1 tsp
  • Garam masala-1/2 tsp
  • Cooking oil-2 tbsp
  • Salt-1/2 tsp to taste
  • pomegranate powder/mango powder-1/2 tsp
  • Coconut-2 tbsp(grated)
  • Coriander leaves  for garnishing

Method


Step 1 –Wash Lady finger in water and dry them completely with kitchen towel.Cut  the top and bottom part of lady fingers, and slit it lengthwise.. Place Lady finger in to big plate and,leave in air for 30 minutes,so it will little dry(less sticky) and absorb less oil when cooking.

Step2-Heat nonstick pan and dry roast cumin seed,peanut,sesame seed, cool it make coarse powder ,keep aside.In bowl take all spices,roasted gram flour,grated garlic, crushes peanut ,grated coconut mix well,keep aside.

Step 3–Heat nonstick pan and add 2 tbsp oil.

Step4-Stuff all lady finger with stuffing and place in hot oil. Cook 3-5 minutes till lady finger  nice crispy with outside and inside also. Remove from heat and garnish with chopped coriander leaves.
