Lychee Ice cream(made with ricotta cheese)

Ice cream is a frozen dessert  usually made from dairy products. Rich creamy, super delicious,soft. It is very easy to make in very short time ,without ice cream maker  and healthy delightful dessert.Lychee ice cream is made with fresh lychee and fresh ricotta cheese ,it is natural and super delicious ice cream.Lychee ice cream very easy make to at home .

Ingredients ( serving-4)


  • Ricotta Cheese  (homemade) – 200 grams/1 cup
  • Hung curd(homemade) – 1/2 cup
  • Salt –1 pinch
  • Lychee(Fresh)-2 cup
  • Vanilla extract-1 tsp
  • Sugar-1/2 cup
  • Cashew nut–6-8 pieces(soaked in water for 30 minutes)

Method


Step 1 – Take fresh lychee  peel it and remove seed.In grinder,  take 1.5 cup lychee,grind it . Use strainer and strain it collect puree,keep aside.Rest 1/2 cup lychee  chopped finely and keep aside.

Step2-Take sugar,in a grinder make powder. Add fresh ricotta,hung curd,vanilla extract,salt,cashew nut , grind it 3-4 minutes. Add lychee puree and grind it 3-4 minutes till smooth ,soft  consistency.Place mixture into the container.

Step 3 – Keep container in freezer to set for minimum 1hours. After 1 hour take out container from freezer and  add chopped lychee and fold it proper. Cover container with cling film and container cap and keep in freezer for 2-3 hours till ice cream set.

Enjoy delicious,  rich creamy ,flavored, Lychee Ice Cream!!!!!!!

  5. This looks fabulous–and along the same lines as my sorbet recipes: no ice cream machine needed! Have you tried it with other fruits? I don’t grow lychee, but the strawberries and rhubarb are going off right now and raspberries are setting fruit. I’m thinking your technique might work with any fruit puree.
