Tawa Vegetables

Tawa Vegetables is  popular in Indian wedding/party.Boiled or deep fried vegetables cooked with spices in big tawa in frount of people and direct serve on plate. Hot crispy vegetables ,people can choose up on own choice.Tawa vegetables gives perfect taste with Indian Bread.

Ingredients( 4 servings)

  • Kundru(Ivy gourd)-5-6  cut in to two pieces lengthwise
  • Baby potatoes-6-8 boiled
  • Small bitter gourd-4 peel apply salt and leave for 10 minutes,wash it  and cut into half lengthwise
  • Lady finger- Cit in to lengthwise and  dry in air for 30 minutes before frying
  • Baby onion-5-6   pieces
  • Baby brinjal- 2 Cut in to two parts and dip in water before frying
  • Green small brinjal- 2Cut in to two parts and dip in water before frying
  • Parwal-2 cut in to halved in lengthwise


  • Spice
    • Garlic paste-1 tsp
    • Tomato puree  -1 cup
    • Onion-1 cup finely chopped
    • Red chili powder-1 tsp
    •  Turmeric powder-1/2 tsp
    • Coriander powder-1 tsp
    • Fennel seed powder-1 tsp
    • Pav bhaji masala-3 tbsp
    • Cumin powder-1 tsp
    • Cooking oil 3 tbsp
    • Salt-1/2 tsp to taste
    • Garam masala-1 tsp
    • coriander leaves- 2 tbsp finely chopped
  • Coriander leaves and green chili for garnishing



Step 1 –Heat nonstick pan and add oil for deep fry,place bitter gourd,lady finger,ivy gourd,brinjal,parwal,baby onions,boiled baby potatoes, one by one till crispy ,keep aside.

Step2- Arrange all vegetables on preheat tawa in corner and sprinkle some salt and some dry spices.

Step3- In center of tawa add 2 tbsp oil,add chopped onion cook till light golden brown,add garlic paste and all spices,pav bhaji masala mix well,add tomato puree mix it  cook 1-2 minutes.add chopped coriander leaves and  cook vegetables one by one with tomato masala  for 1-2  minutes and direct serve on plate.
