Yam is good for healthy immune system.Yam Pickle absolutely tasty,healthy pickle .
- Yam – 250 grams
- Fenugreek seed-1 tsp
- Fennel seed-1 tsp
- Jaggery-1 tbsp grated
- Mustard seed powder-2 tbsp
- Corianderpowder-2 tbsp
- Whole black papercorn-1 tap
- Whole clove-3-3
- Turmeric powder – 1 tsp
- Salt- 1 tbsp( as per taste)
- Red chili powder-1 tbsp
- Mustered oil-4-5 tbsp
- Vinegar-3 tbsp
Step 1 – Peel and cut yum in to small cube(1/2 -1/2inch chunks), wash with water ,keep aside.
step 2-Dry roast fenugreek seed,fennel seed till fragrant,cool it,make it powder with the help of mortar pestle.
Step 3 –In pressure cooker take 1-2 cup water,yum cubes 1/2 tsp salt give one whistle and cook 3-4 minutes in low flame,keep aside.
Step4-Take out yum cubes from water and place in cotton cloth,keep in sunlight/fan for 3 hours till completely dry.
Step5 – Take one dry bowl put all dry yum cubes add all spices(whole clove,whole peppercorn,fenugreek seed powder,mustard powder,red chili powder,turmeric powder,salt,jaggery,coriander powder, mix well add vinegar mix it cover and keep aside for 2 hours.
Step6- Heat mustered oil for 2 minutes and cool it.Add oil in spice coated yum cubes ,mix it .Cover with lid and keep in dry place for 2-3 days.Every day mix with dry spoon.After 3 days it is ready to eat.
Store in sterilized bottle and keep in dry place/keep in freeze it stays good for2-3 months.
