Baingan Bharta(South Asian dish)

Brinjal   is popular vegetable in Asia. Brinjal is low calorie and high fiber vegetables. Brinjal(Baingan)  cooked in  lots of way in Asian countries.Smoky flavored Baingan bharta is popular in India(Punjab) made with roasted, mashed brinjal (baingan),tomato,onion and  flavored with spices.Baingan bharta is also  serve as popular  main course in Pakistan,Bangladesh.

Ingredients( 2 servings)

  • Aubergines/Brinjal/ large eggplant( Baingun)-1
    • Ginger-1 tsp fine grated
    • Red chili powder-1/2 tsp
    •  Turmeric powder-1/2 tsp
    • Coriander powder-1 tsp
    • Lime juice-1/2 tsp
    • Sesame seed-1 tsp
    • Cumin seed-1 tsp
    • Cooking oil 3 tbsp
    • Salt-1/2 tsp to taste
    • Garam masala-1 tsp
    • Onion-1/2 cup finely chopped
    • Tomato-1 /2 cup finely chopped
    • Green chili-1 tbsp finely chopped
    • Dry fenugreek leaves-1 tbsp
  • Coriander leaves  for garnishing
  • For smoky flavor- 2-garlic clove,1-whole red chili(Optional)


Step 1 –Wash large eggplant and dry with kitchen towel and apply(1/2 tsp) oil on over brinjal and (prick it with thin knife-optional),roast on stove top till  skin is blacked and cooked.Cool it, Peel  of  the skin  and mash  brinjal roughly ,add lame juice mix it keep aside.

Step 2 –Heat nonstick pan and add 2 tbsp oil,add sesame seed, cumin seed when seed crackled ,add  onion cook it 2-3 minutes till light brown,add chopped green chili ,grated ginger cook it 1-2 minutes add red chili powder,turmeric powder,coriander powder,garam masala ,salt,fenugreek leaves, add chopped tomato, cook it till tomato little dry and separate from oil.

Step3-add chopped brinjal  cooked 2-3 minutes ,mix everything and cooked 2-3 more minutes.

Step4-Burn2 garlic clove and one dry red chili on stove top and put on cooked baingan bharta cover with lid and remove from heat.Garnish with coriander leaves and serve.

Enjoy delicious Baingan bharta with rice/roti/paratha.
