Kalmi Vada(Rajasthani delicacy)

Kalmi vada/Chana dal fritters is made with coarsely batter of split bengal gram and crushed spices . Crispy crunchy kalmi vada is perfect  for tea time snacks.

Ingredients (For 10 pieces)


  • Chana dal( split bengal gram) – 1cup
  • Chick pea flour – 1tbps(optional)
  • Coriander seed-1 tbsp
  • Salt – 1tsp(to taste)
  • Green chili,garlic,ginger paste-1 tsp
  • Red chili powder – 1 tsp
  • Cooking oil – For deep frying
  • Fennel seed – 1tsp
  • Onion – 1 /2 cup finely chopped(optional)
  • Coriander leaves-1 tsp finely chopped(optional)

Method


Step 1-Wash and soak the chana dal for 3 hours  in lots of water.

Step 2-In grinder take dal grind coarsely add 1-2 tbs water,keep aside.Dry roast coriander seed and fennel seed and  crushed it,keep aside.

Step 3 –Take batter in bowl  add salt,chickpea flour, chopped onion,red chili powder, crushed fennel seed ,crushed coriander seed,green chili paste and mix a,cover batter keep aside for 10 minutes.

Step 4 – Heat oil for frying on medium hot oil,take small lemon size ball from dal batter in palm and flatten it.slide it in hot oil ,fry in medium flamefor2-3 minutes, turn it cook other side 2-3 minutes till both side crispy and golden brown.

Step5 – Take out Kalmi Vada and keep in tissue paper and fry all vadas in similar way.

Serve with peanut chutney/green chutney .
