Bhindi Masala(Lady Finger/ Okra cooked with spices)

Lady Finger is popular  in  some Asian countries. Due to high fiber and nutritional benefits it is used as meal/side dish/starter.In India  every house hold their ,own recipe  for Lady finger (Bhindi/Okra) .Bhindi masala,Bhindi in yogurt gravy,stuffed Bhindi,lady fingers fritters,Bhindi do pyaza.Bhindi masala is perfect for lunch box with rotis/paratha.Bhindi masala  is  cooked with spiced onion- tomato  base ,simple and healthy  dish.Roasted spices(no use of garam masala) gives best flavor to Bhindi masala.

Ingredients( 2 servings)


  • Lady Finger-10-12 pieces
  • Garlic -1 tsp grated
  • Red chili powder-1 tsp
  •  Turmeric powder-1/2 tsp
  • Mustard seed-1/2 tsp
  •   Peanut-2 tbsp
  • Coriander seed-1tsp
  • Cumin seed-1 tsp
  • Cooking oil 2 tbsp
  • Salt-1/2 tsp to taste
  • Lemon juice-1/2 tsp
  • Onion-1-2 cup( grated)
  • Tomato-1/2 cup(grated)
  • Coriander leaves and green chili for garnishing

Method


Step 1 –Wash Lady finger in water and dry them completely with kitchen towel.Cut  the top and bottom part of lady fingers, and cut in to 1/2 inch long pieces. Place Lady finger in to big plate and,leave in air for 30 minutes,so it will little dry(less sticky) and absorb less oil when cooking.

Step2-Heat nonstick pan and dry roast coriander seed,cumin seed,peanut, cool it make coarse powder ,keep aside.

Step 3–Heat nonstick pan and add 2 tbsp oil add chopped lady finger and cook it low flame till crispy crunchy it will take time 7-8 minutes,remove it keep aside. Same pan add mustard seed when seed crackled ,add grated  onion cook it 1-2 minutes till light brown, add garlic paste cook it 1 minutes add red chili powder,turmeric powder,powder, mix well add grated tomato cook it till tomato little dry and separate from oil, add crushed spices and salt,lemon juice, mix well.

Step4-Add fried Lady fingers mix it cook 2-3 minutes till lady finger  nicely coated with spices. Remove from heat and garnish with chopped coriander leaves and finely chopped green chili (optional).
