Spinach Paratha is best way to take spinach in meal/breakfast.Spinach paratha can make two way.First method , make dough with chopped spinach/spinach paste and spices and make parathas and second method make normal paratha dough, stuff with spinach.In spinach stuffing ,spinach paste cooked with potato/gram flour/green peas/crumbled cottage cheese and flavored with garlic and lemon juice.
- Whole wheat flour – 1 cup
- All purpose flou-1/2 cup
- Salt – 1/2 tsp to taste
- Oil – 1 tsp
For Spinach stuffing
- Cumin seed-1/2 tsp
- Black pepper powder-1/2 tsp
- Spinach-1 cup
- Green chili-1-2 chopped
- Lemon juice-1 tsp
- Potato boiled-1 medium
- Salt-1/2 tsp
- Cooking oil/butter/clarified butter-for cooking
Step 1 –Boil water in pan add washed spinach cook 2-3 minutes(or take in microwave safe bowl cook for 1-2 minutes),and quickly wash with cold water .In grinder take spinach,green chili,lemon juice and garlic grind it,keep aside.
Step 2 – Take both flour,salt,oil ,knead 2-3 minutes make smooth dough cover it keep aside for 10 minutes.
Step3-Take nonstick pan add 1 tbsp oil add cumin seed when seed crackle add spinach paste cook it 1-2 minutes add black paper powder,salt,add boiled grated potato mix it cook 30 seconds remove from heat cool it completely.
Step 4 – After 10 minute take lemon size ball from dough and flatten it by pressing make like small bowl,Put 1 tbsp stuffing inside and close it proper and make it into a ball.
Step 5 – Press the filled ball gently in dry flour ,using a rolling pin roll the ball make 6 inch circles.
Step 6 – Heat nonstick griddle and place paratha and cook in low medium flame when the paratha start puff up ,flip it gentle.Apply some butter/ghee/oil and cook proper in both side 3-4 minutes.make all parathas similar way.
Serve hot paratha with yogurt and pickle !!!
