Stuffed Brinjal(Brinjal cooked with onion- tomato base spicy gravy)

Brinjal   is popular vegetable in Asia. Brinjal is low calorie and high fibre vegetables. Brinjal  cooked in  lots of way in Asian countries.In India  every state hold their ,own recipe  for stuffed brinjal.

Ingredients( 3-4 servings)

  • Aubergines/Brinjal( Baingun,green one)-5 pieces
  • For stuffing-
    • Garlic paste-1 tsp
    • Red chili powder-1 tsp
    •  Turmeric powder-1/2 tsp
    • Coriander powder-1 tsp
    • Roasted gram flour/roasted crusted peanut-2 tbsp
    • Fennel seed powder-1 tsp
    • Mango powder-1/2 tsp
    • Cumin seed-1 tsp
    • Cooking oil 3 tbsp
    • Salt-1/2 tsp to taste
    • Garam masala-1 tsp
    • Onion-1/2 finely chopped
    • Tomato-2 tbsp finely chopped
  • Coriander leaves and green chili for garnishing


Step 1 – Slit the brinjal into four without breaking and keep in salted water for 10-15 minutes.

Step 2 –Heat nonstick pan and add 1 tbsp oil,add cumin seed when seed crackled ,add  onion cook it 2-3 minutes till light brown,, add garlic paste cook it 1-2 minutes add red chili powder,turmeric powder,coriander powder,fennel powder,mango powder,roasted gram flour ,salt,garam masala mix well add chopped tomato cook it till tomato little dry and separate from oil,remove from heat keep aside.

Step3-Stuff the all brinjal with stuffing ,keep aside.

Step4-Heat nonstick pan add 2 tbsp oil ,place all brinjal in hot oil, cook in high flame in  till golden brown and turn tender with all sides. Remove from heat ,garnish with fresh coriander leaves and finely chopped green chili.
