Khichdi is a South Asian one pot meal made from rice and lentils.Moong dal khichdi is healthy,comfort and easy to digest meal for all age group.
- Basmati Rice – 1 cup
- Toor dal – 2 tbsp
- Moong dal – 1/2 tbsp
- Green cardamom-2-3
- Salt – 1/2tsp(to taste)
- Garlic-2-3 clove
- Coriander leaves – 1tsp(finely chopped)
- Green pea – 2 tbsp
- Cooking oil/Ghee(Clarified butter) – 2 tbsp
- Carrot – 1tbsp finely chopped
- Cloves -1-2
- Bay leaf – 1 to 2
- Cumin seed-1/2 tsp
- Mustard seed – 1 tsp
- Red chili powder – 1/2tsp
- Green chili – 1 finely chopped
- Ginger paste – 1/2tsp
- Tomato – 1/2 cup
Step 1 -Wash and soak rice and dal for 30-45 minute.
Step 2 –In pressure cooker add 2 tbsp ghee,mustard seed when seed crackle add cumin seed,bay leaf,clove,cardamom,garlic clove, ginger paste mix it 30 seconds add chopped carrot,green peas,tomato mix it cook 1 minutes add soaked dal- rice mix it add turmeric powder,red chili powder and salt mix it add 4-5 cup water. Cook it till it give 4 whistles after that for 2-3 minutes let it cook in simmer. Cool it and keep aside(Consistency should be little runny).
Garnish with coriander leaves and finely chopped chili(also can top with clarified butter) serve with curd/buttermilk/pickle and papadum.
