Date Ice Cream with Roasted Almond

Dates and roasted almond ice cream is one of the best ice cream . It  is made with naturally sweets dates and crunch roasted almond. Best part of date ice cream is, it can eat during fasting and auspicious day and also date ice cream no need any other sweetener.

Ingredients (for 2 serving)


  • Condensed milk-1 cup(homemade)
  • Date pitted and chopped-1 cup
  • Cardamom powder-1 tsp
  • Nutmeg powder-1 tsp(optional)
  • Cashew nut -10-12
  • Almond-12-15
  • Pinch of salt

Method


Step 1 -Take chopped dates and wash with water and soaked in sufficient water for 2 hours.Also soak cashew nut in sufficient water for 2 hours(soaking dates and cashew nut is optional  but highly recommend   follow it,for silky soft texture).Dry roast almond for1-2 minutes in low flame and chopped it keep aside.

Step2-Take date and cashew nut in microwave safe bowl cook for 2-3 minutes with 2 tbsp water, keep aside for 10 minutes till cool it proper.

Step 3 –Take cooled dates and cashew nut in  food processor/grinder and process it for 1-2 minutes blend till smooth .add condensed milk process it 1-2 minutes add pinch of salt,add cardamom powder,nutmeg powder again process it 30 second.

Step4- Pour in the container and fold with roasted almond,  cover them with cling film and also cover with cover lid,keep in freezer for 6-8 hours.

Enjoy Silky, soft  Date ice cream with  roasted almond !!!!!

Note-Cardamom powder and nutmeg powder  can replace with 1 tsp vanilla extract.

    1. Thanks so much…For homemade Condensed Milk-Boil milk(500ml) in nonstick deep pan.Add sugar(100 g)and stir continuously with 1-2 minutes, adjust flame also. W
      hen milk reduce with 1/2 of original quantity add baking soda(1/4 tsp) cook till milk reduce 1/3 of original quantity.Remove from heat,cool it completely and store in jar.Keep in freeze ,stay good for 1 month.
      Condensed milk ready in 20 -25minutes(total cooking time)s.Do not overcook ,after chilled it will little thick.
