Sounfiana Bitter gourd with Potato

Bitter gourd   is popular vegetable in Asia. Due to health benefit and medicinal value everyone wants to add in meal.Bitter gourd  cooked in  lots of way in Asian countries.In India Gujarat, bitter guard cooked with jaggery and tamarind pulp/raw mango ,South Indian cosine bitter gourd cooked with coconut,lemon juice/mango powder and lentils. In North India Punjab, bitter guard cooked with onion,garlic and spices.North Indians not add any sugar in bitter gourd but bitter gourd is very delicious ,crispy and available in all Indian restaurant menu .Here  is stuffed bitter guard in Punjabi style with fennel(Sounf) seeds flavored.Potato complements to bitter gourd very well and gives dish perfect.

Ingredients( 3-4 servings)

  • Bitter Gourd-5-6 pieces
  • Salt-1/2 tsp,to taste
  • Potato-2 big size
  • For stuffing-
    • Onion-3 tbsp finely chopped
    • Garlic paste-1 tsp
    • Red chili powder-1 tsp
    •  Turmeric powder-1/2 tsp
    • Coriander powder-1 tsp
    • Fennel seed(Sounf)-2 tbsp,roasted,coarsely crushed
    • Tomato  paste/tamarind paste-2 tbsp
    • Cumin seed-1 tsp
    • Cooking oil 3 tbsp
    • Salt-1/2 tsp to taste
    • Garam masala-1 tsp
  • Coriander leaves for garnishing


Step 1 – Take Bitter gourd and scrape it.wash with water.Slit the Bitter Gourd and with the help of fork  remove the all seeds,keep aside.Take big size potato peel it. And with the help of fruit scooper/baller  make potato balls,keep all potato balls in a bowl of water keep aside.

Step 2 –Apply salt on Bitter Gourd and keep aside for 20-30 minutes. After 30 minutes wash with water and keep aside.

Step 3 –Heat nonstick pan and add 1 tbsp oil,add cumin seed when seed crackled add bitter guard  seed cook it 1-2 minutes till little brown add chopped onion ,garlic paste cook it 2-3 minutes add red chili powder,turmeric powder,coriander powder, crushed fennel ,salt,garam masala,tomato paste mix it cook 2-3 minutes,keep aside.

Step4-Stuff the all bitter gourd with stuffing , keep aside.Take one skewer/ sticks and arrange potato then stuffed bitter guard then again potato keep aside.Make all similar way.

Step5-Heat nonstick pan add 2 tbsp oil ,place all bitter gourd in hot oil, cook in medium flame in  till golden brown with all sides,  it will take7-9 minutes. Remove from heat ,garnish with fresh coriander leaves.

Enjoy with Roti/Rice and Dal.
