Sindhi Kadhi(Vegetables cooked in tangy gram flour gravy)

Sindhi Kadhi is absolutely delicious kadhi and Specialty of Sindhi cousins.Sindhi Kadhi is made with vegetables cooked in roasted gram flour tangy gravy.In this kadhi each vegetable complement to each other and make delicious,nutritious .In India each Sindhi house follow own recipe for Sindhi kadhi ,some people use tomato puree in kadhi,some people make vegetable fritters then cooked in gravy,some people use fried vegetable cooked in gram flour gravy.Here Sindhi kadhi recipe in which first some vegetable fried then saute with roasted gram flour and spices,so all vegetables coated with gram flour and spices then cooked in tamarind-curd mixture.And finely tempering with fenugreek,onion,ladyfinger.

Ingredients(2-3 servings)

  • Gram flour-4 tbsp
  • Lady fingers(Okra)-6-8 Cut in to long
  • Green brinjals-2
  • Cluster beans-10-12
  •  Potato-1medium size
  • Drumstick -1
  • Tamarind pulp-2 tbsp
  • Thick curd-3 tbsp
  • Curry leaves-4-5
  • Green chili-1-2 finely chopped
  • Salt- 1/2 tsp( as per taste)
  • Cooking oil -4 tbsp
  • Mustard seed-1 /2tsp
  • Fenugreek seed-1/2 tsp
  • Cumin seed-1/2 tsp
  • Onion – 2 tbs chopped
  • Red chili powder-1/2 tsp(optional)
  • Turmeric powder-1/2 tsp
  • Coriander leaves-2 tbsp finely chopped


Step 1 – Cut the brinjal into small pieces  put in to water,Cut drumstick into 1.5 inch pieces. Remove skin of potato and cut in to big cubes,keep in water.Cut cluster beans in to 1 inch pieces.Cut lady finger in to long,keep aside.

Step2-Heat nonstick pan and dry  roast gram flour 3-4 minutes in low medium flame till fragrant,keep aside.In one bowl take tamarind pulp and curd beat with hand blander for  2 minutes keep aside.

Step3-Heat nonstick pan add 2 tbsp oil add cumin seed when seed crackled,add drumstick,and potato cover it and cook in medium flame for 3-4 minutes till both became soft,add green brinjal and cluster beans cook in high flame 2-3 minute,do not cover.Add roasted gram flour,salt,red chili powder,turmeric powder mix well cook in medium flame 3-4 minutes.

Step4-Add 1cup water mix well and boil it.Add tamarind pulp and curd mixture,mix it cook in low flame 2 minutes.

step5-Heat nonstick pan add 2 tbsp tbsp oil ,add mustard seed when seed crackled,add fenugreek seed ,curry leaf,chopped green chili,chopped onion,add lady fingers and fry in high heat till cooked proper in completely it will take2-3 minutes.Pour all ladyfinger with spices in to tamarind vegetable gravy mix it cook in low flame for1-2 minutes. Garnish with fresh coriander leaves.

Enjoy with steam rice/roti!!!!!!
