Vegetable Pulav/Pulao(One Pot Meal)

Vegetable Pulav/Pulao is a one pot meal in which long grain rice cooked with mix of vegetables and flavored with spices.Pulao is perfect for bachelors/kids.Pulao is healthy and delicious dish ,also it can customized with favorite vegetables.

Ingredients


  • Basmati Rice – 1 cup
  • Water -2 cup
  • Bay leaves2-3
  • Salt – 1/2tsp(to test)
  • Cashew nut – 4 to 6
  • Cooking oil/Ghee – 2 tbsp
  • Black peppercorns-1 tsp
  • Green cardamom-2-3
  • Clove-2-3
  • Ginger garlic paste-1 tsp
  • Tomato-1/2cup chopped
  • Cumin seed – 1 tsp
  • Star anise-1
  • Green chili – 2 finely chopped
  • Onion-1 /2 cup chopped
  • Potato-5-6 cubes
  • Carrot-1/2 chopped
  • Cauliflower-5-6 small pieces
  • French beans-2 tbsp chopped
  • Green peas-1 cup
  • Lemon juice-1/2 tsp

Method


Step 1 -Wash and soak rice for 30-45 minutes.

Step 2– Heat 2tbsp oil/ghee  in a nonstick pan add cumin seed when seed crackle, add bay leaf,peppercorn,green cardamom,star anise,clove,cashew nut, stir for 20 seconds,add chopped onion saute it 1-2 minutes ,add green chili stir it,add  ginger garlic paste mix it  for 10 seconds,add potato cubes  saute it 1 minute,add cauliflower,green peas,french beans mix it, saute it for 1 minute add tomato ,salt,coriander powder mix it 1 minutes.

Step3- Add rice and mix it gently, cook 1-2 minutes so rice coated with spices .Add 2 cup water,lemon juice, mix it again.Cover with lid and cook in medium flame for5-6 minutes(till grains softer and separated) .Remove from heat after 10 minuted open lid and serve with curd /papadum/pickles.
