Lassi is an popular Indian chilled flavored beverage. Lassi made with fresh yogurt,sugar, and flavored with cardamom,rose syrup,saffron. In Summer heat Mango Lassi and Rose lassi very popular traditional drink in India(Punjab).For perfect creamy ,thick Lassi always use fresh curd and blend with ice(do not use water/milk).
Ingredients (for 2 serving)
- Yogurt-2 cup(homemade)
- Mango-1/2 cup
- Pistachio -1tsp finely chopped(optional)
- Saffron-some strands
- Cardamom powder-1 tsp
- Rose syrup-2 tsp
- Sugar-3 tbsp
- Ice-1 cup
Method-(2 servings)
Step1- For Mango Lassi-In blander take peeled chopped mango, 1 cup yogurt,1-2 tbsp sugar,saffron,1/2 cup ice blend it till sugar dissolve completely.
Step2-In serving glass add 1/2 tsp cardamom powder ,pour mango lassi.Garnish with pistachio .
Step3-For Rose Lassi-In blander take 1 cup yogurt,1 tbsp sugar,1/2 cup ice ,2 tsp rose syrup ,bland it till sugar dissolve completely.
Step4-In serving glass add 1/2 tsp cardamom powder,pour Rose Lassi.Garnish with little rose syrup.

Strangely enough, there was a time when mango lassi seemed to be a favourite on Indian menus outside India but rarely available in India, with the plain sweetened lassi being the favoured one. Of course now I believe it is a lot more commonly available in India as well.
