Mirch Ka Salan(Curried chili peppers)is a one of very classic dish from Hydrabad. This is available on all good Indian restaurant menu and also big place in Indian wedding feast menu.Mirch ka salan served with any kind of biryani,a great combination. Mirch ka salan made with little spicy long chili cooked in peanut ,coconut tangy greavy and flavored with spices.Peanut,coconut,sesame seed makes Salan recipe grainy and creamy.
- Long Chili-5-6
- Peanut-2 tbsp
- Sesame seed-1 tbsp
- Desiccated coconut-1 tbsp
- Garlic paste-1 tsp
- Ginger paste-1 tsp
- Tamarind pulp-2 tbsp
- Thick curd-1 tbsp
- Black peppercorn – 1/2tbs
- Bay leaf-1-2
- Curry leaves-4-5
- Salt- 1/2 tsp( as per taste)
- Cooking oil -2 tbsp
- Onion –Finely chopped
- Cumin seed – 1 tsp
- Coriander seed-1 tbsp
- Red chili powder-1/2 tsp(optional)
- Garam masala-1 tsp
Step 1 – Take one pan add peanut dry roast it2-3 minutes till fragrant,keep aside.Dry roast sesame seed,coconut,cashew nut,cumin seed,coriander seed 1-2 minutes, till fragrant,keep aside. In grinder take all roasted items,add 3tbsp water and make fine paste.
Step 2 –Take 2 tbsp paste add 1 tbsp curd and 1/4 tsp salt mix well(it is stuffing for chili ),its optional but highly recommend do not miss, it gives great flavor to chili.
Step 3 –Slit the chilies,and remove all seeds so it will become less hot.
Step 4-Take all chili and fill it with little stuffing ,keep aside.
Step5- Heat 2 tbsp oil in pan,fry the chilies 2-3 minutes till brown in all sides,remove from heat,keep aside.
Step6- In same pan add 1 tbsp oil and add bay leaf ,peppercorn,curry leaves, cook 30 seconds,add chopped onion cook it 2-3 minutes till golden in color add,ginger,garlic paste cook 1 minute,add red chili powder,add peanut paste cook it 1-2 minutes add tamarind paste, 1 tbsp curd mix well in low flame add salt,3 tbsp water mix well.
Step7- Add stuffed fried chili,garam masala, cook in low flame 1-2 minutes .Remove from heat garnish with fresh coriander leaves and roasted sesame seed.
Enjoy Mirch ka Salan with biryani/pilaf/jeera rice/Steamed rice.
