A Cupcake is a small cake designed to serve one person.Mawa cake/cupcake is popular in Irani cafes of Mumbai(India).Mawa cake /cupcake made with fresh mawa and flavored with cardamom and saffron.Mawa cupcake is soft,fluffy ,cardamom flavored cupcake perfect with tea.
- Cake flour – 4 tbsp
- Almond flour – 3 tbsp
- Mawa-3 tbsp
- Cardamom powder – 1 tbsp
- Cashew nut-6
- Salt – 1 pinch
- Sugar – 4 tbsp
- butter – 3tbsp
- milk-4 tbsp
- Saffron-some strands
- Baking powder – 1/2 tsp
- Baking soda – 1/2 tsp
- Yogurt – 1 tbsp
- Vanilla essence – 1/2 tsp
Step 1 – In one bowl take mawa, milk, yogurt, vanilla essence, butter,sugar and blend it till it gets little fluffy.
Step 2 –In other bowl take cake flour, almond flour, salt, baking powder, baking soda,cardamom powder and mix it.
Step 3 – Preheat oven to 180 C.
Step4 – Mix flour into milk mixture gently ( till everything is mixed together ) and keep aside.
Step 5 – Line tray with cupcake liner. Pour 2 tbsp batter on each cup and put 1 cashew nut on top of batter. Fill all cups similar way.
Step 6 – Place tray on oven, bake it 20-25 minutes till it becomes golden brown . Check with toothpick inserted in center of cupcakes, comes out clean.
Step 7 – Cool it for 10 minutes. Enjoy your healthy, delicious, flavored Mawa Cupcakes .It can store in refrigerator for2-3 days.
