Sev puri is popular snack in Mumbai.Boiled and mashed potato mix with chhole and served in small crispy puri. sev puri is very easy dish for evening snack.Puri can make in advance and store in airtight container
Ingredients (For- 15 Puri)
- All purpose flour-1/2 cup
- Salt- 1/2 tsp as per taste
- Hot water-1/2 cup
For potato- chhole masala
- Potato boiled-2
- chhole boiled-1/2 cup
- salt-1/2 tsp
- Cumin powder-1 tsp
- Coriander powder-1 tsp
- Red chili powder-1 tsp
- Chaat masala-1 tsp
Cooking oil – For deep frying
- Coriander chutney -2 tbsp
- Onion -2 tbs finely chopped
- Curd ((thick) – 1/2 cup
- Date-tamarind chutney -2 tbsp
- Coriander leaves -1 tbs finely chopped
- Sev – 2 tbsp
Step 1 – Take all purpose flour in a bowl add 2 tbsp oil,salt, mix it proper and make a semi stiff dough with the help of water,cover it with damp cloth and keep aside for 30 minutes.
Step2- Spice powder-In a bowl take cumin powder,coriander powder,chaat masala,salt,chili powder mix it keep aside.
Step 3 –Mash potato,add 1 tsp spice powder,boiled chhole mix well ,keep aside.
Step 4 – Take dough and knead once again, make lemon size ball from dough and roll them into big puris .Use any round cookie cutter/bottle cap and cut in to small poori.prick all puri with fork with both side so it will not puffed up when frying.
step5-Heat oil in a pan for frying puri ,place puri on medium hot oil cook it till golden ,crispy in both sides it will take 7-10 in low medium flame.take out puri from oil and keep in tissue paper cool it completely.
Step 6 –Assemble sev puri: Take one plate arrange 5-6 puri on plate,put 1 tsp potato chhole masala on each poori.Put finely chopped onion,coriander leaves,pour 1/2 tsp curd and sprinkle little spice powder.Pour 1/2 tsp green chutney and tamarind chutney on each puri. topping with sev each puri and serve it.
