Achari Paneer originated from North India and one of very classic dish. This is available on all good Indian restaurant menu. Indian cottage cheese(Paneer) marinated in pickle spices and grilled.It is absolutely delicious recipe.
- Paneer – 250 grams (homemade)
- Hung curd-3 tbsp(homemade)
- Pickle gravy-2 tsp
- Fenugreek seed-1 tsp
- Fennel seed-1 tsp
- Mustard seed-1 tbsp
- Ginger garlic paste-1 tsp
- Coriander seed-1/2 tsp
- Turmeric powder – a pinch
- Salt- 1/2 tsp( as per taste)
- Cooking oil -2 tbsp
- Green chili – 1 slit
- Red chili powder-1/2 tbs
- Coriander leaves for garnishing
Step 1 –Cut paneer in to large rectangle chunks,keep aside.
step 2-Dry roast fenugreek seed,coriander seed,mustard seed,fennel seed till fragrant,cool it,crush the seed with the help of mortar pestle.
Step 3 –In bowl take ,all spices, crushed spices ,ginger garlic paste,pickle gravy, hung curd,1 tsp oil, mix well.Add paneer ,green chili,mix gently,cover it ,keep in fridge for 20-30 minutes .
Step 4– Heat 1 tsp oil in a nonstick pan.string the marinated cottage cheese cubes onto sticks and place them in the pan. gentle cook 1-2 minutes.Turn it other sides cook 2-3 minutes till all sides golden brown.Remove from heat garnish with fresh coriander leaves serve hot.
