Banana and Chocolate Chip Muffins(Eggless)

Muffins is individual sized, quick baked bread. Muffins are typically eaten as a breakfast food. Combination of banana and almond flour  make  muffin healthy and chocolate chips gives it chocolaty flavor .

Ingredients(6 pieces)


  • Cake flour – 1/2 cup
  • Almond flour – 2 tbsp
  • Ripe banana – 2
  • Chocolate chips – 2 tbsp
  • Salt – 1 pinch
  • Sugar – 3 tbsp
  • Olive oil – 3tbsp
  • Baking powder – 1 tsp
  • Baking soda – 1/2 tsp
  • Milk – 1 tbsp
  • Yogurt – 1 tbsp
  • Vanilla essence – 1/2 tsp
  • Lemon juice – 1/2 tsp

Method


Step 1 – In one bowl take mashed banana, milk, yogurt, vanilla essence, lemon juice, olive oil, sugar and blend it till it gets little fluffy.

Step 2 –In other bowl take all purpose flour, almond flour, salt, baking powder, baking soda and mix it.

Step 3 – Preheat  oven to 180 C.

Step4 – Mix flour into milk mixture gently ( till everything is mixed together ) and keep aside.

Step 5 – Line muffin tray  with muffin cup. Pour 1-2 tbsp batter on muffin cup and put some chocolate chips on top of batter. Fill all muffin cup similar way.

Step 6 – Place muffin tray  on oven bake it 20-25 minutes till it becomes golden brown( in top  some cracked). Check with toothpick inserted in center of muffin comes out clean.

Step 7 – Cool  it for 10 minutes. Enjoy your healthy, delicious, fluffy Banana Chocolate Chips  Muffin !!!!!!

  1. Yum……Just wanted to know what is cake flour, is it just maida or a mix of something else too?

Thanks Radhika,cake flour and maida both are different flour.maida contains more gluten and it is good for bread,cake contains less gluten and it is perfect for airy,light texture of cake,muffins.there are lots of brands cake flour available in shops.If it’s not available there it can make it easy at home _ 1 cup all-purpose flour + 2 tbsp corn starch mix it both and sieve two times.

  4. These will on for testing, they looks and sound very delicious. I will use almond milk instead of usual milk. How big are your muffins baked? I ask to assure, that we use equal sizes.

    I have used almond flour a lot in baking in the past, since I was on low carb diets. It adds a nice flavor to the baked good too.

    I also like how the recipe is a small batch. It’s just my husband and I at home so I don’t like too too many around. Because I eat them all up!
