Kulfi is a classic frozen dessert from the Indian Subcontinent. Kulfi is made by boiling milk for a long times till it becomes rabri,which is then cooked with sugar and flavored with cardamom ,saffron,rosewater.Slow cooking process makes kulfi super delicious.
Ingredients (for 5 serving)
- Milk-1.5 litre
- Pistachio -2 tbsp finely chopped
- Saffron-some strands
- Cardamom powder-1 tsp
- Rose water-1 tsp(optional)
- Sugar-1/2 cup
- Cashew nut powder-2 tbsp
- Corn starch-1 tbsp
Method
Step 1 -Take milk in deep nonstick pan and bring to boil with alternate stirring.Cook 15 -20 minutes, till milk reduces half of its original quantity. Take 3 tbsp milk in bowl and add corn starch mix well keep aside.
Step2-Add sugar,cashew nut powder,chopped pistachio,saffron cook 5 minutes till milk reduces one third of its original quantity.Reduce flame ,add corn starch with continuous stirring,cook 2-3 minutes till paste consistency . Remove from heat,add cardamom powder,rose water mix it proper, cool for 10-15 minutes.
Step 3 –Take cooled milk in food processor/grinder and process it for 30 seconds so its gives good texture(optional) pour mix into same pan and cook 30-60 seconds.Remove from heat and cool it completely. Pour the cooled mix into kulfi molds/ice cream mould/container/ steel glasses/Popsicle molds cover them with lids and also cover with cling film,keep in freezer for 6-8 hours. Demold and enjoy delicious,saffron flavored classic Indian Kulfi!!!!!!

I love kulfi and used to eat it at the end of a meal in Leyton, London. There are a wide range of Asian sweet shops that sell everything from multi coloured sweets to wonderfully spicy shami kebabs.
It’s about time we had a decent one in Norwich.
