Puran Poli is popular food in Maharashtra, India.It is usually prepared in auspicious occasion.Puran poli is made with little salty wheat flour and sweet lentil and flavored with saffron,cardamom.
- Chana dal(skinned split bengal gram)/yellow gram-1cup
- Whole wheat flour- 2 cup
- Salt –1 pinch
- Sugar-2 tbsp
- Cardamom powder-1/2 tsp
- Saffron-some thread
- Nutmeg powder-2 pinch
- cooking oil/butter/Ghee-3 tbsp
Step 1 – Take flour in a bowl, add 1 tsp oil, salt and make soft,smooth dough with water (knead 10 minutes),cover it and keep aside for 20 minutes.
Step 2 –Rinse chana dal with water 2-3 times,soak it for 20 minutes.Take chana dal in pressure cooker add 1 cup water and give 2-3 whistles,keep aside.
Step3-Heat nonstick pan add 1 tsp ghee add dal with water,sugar mix well and cook 10-15minuteswith continuous stirring, till dal absorbed all water and get soft fudge consistency.Add cardamom powder,saffron,nutmeg powder, mix well. Keep aside cool it completely.
Step 4 – Take lemon size ball from dough and flatten it by pressing make like small bowl, put 1 tbsp mixture inside and close it proper and again make it into a ball .
Step 5 – Press the filled ball gently in dry flour ,using a rolling pin roll it into 4 diameter circles like chapatis.
Step 6 –Heat nonstick pan ,place chapatis and cook2 -3 minutes both sides ,apply little ghee all over puran poli and cook 1-2 more minutes serve hot.
