Eggless Farfalle/bowtie/butterfly pasta is very easy to make home and taste is more better then shops.Farfalle cooked in white sauce and cheese served as side dish.
For Eggless Farfalle (bowtie,butterfly pasta)
- All purpose flour-1 cup
- Semolina – 1 cup
- Olive oil – 1 tbsp for kneading
- Salt – 1/2 tsp/3 pinch
- Water – 1/2 cup/4 tbsp
For Cooking in white sauce with cheese
- Farfalle-1 cup
- Red chili flakes-2 tsp
- Black paper powder – 1 tsp
- Mix Italian herbs – 1 tbsp(optional)
- Salt-1/2 tsp
- Garlic clove-5-6 finely chopped
- Red,yellow,Green bell paper-1/2 dice(mix)
- Olive oil–2 tbsp
- Milk-250 ml
- All purpose flour-2 tbsp
- Mozzarella block cheese-30 gram
Step 1 –In large bowl take semolina,all purpose flour ,salt olive oil ,mix it well add little water and kneed dough 10-15 minute make smooth elastic dough ,cover dough with cling-film and keep in fridge for 1 hour.
Step2-Take out dough from fridge and cut in 4-5 pieces,take one piece and dust with flour use rolling pin and roll out,with knife make 2 inch horizontal stripes,with pasta cutter make 2 inch wide rectangles these stripes.Put index fingers on center of rectangles and tightly squidge edges and give shape like butterfly/bowtie make all similar way.Place shaped Farfalle on tray dust with some flour and leave for overnight/24 hours so it will dry completely .
Step3-In a large bowl add 3-4 cup water boil it add 3-4 drop olive oil,1 tsp salt and dry pasta ,boil it 10 minutes without stirring ,then check with spoon if it is not cooked then stir it and cook 2-3 more minutes,place pasta in any strainer and remove excess water keep aside.
Step 4 –Heat nonstick pan add 1 tbsp olive oil,add all purpose flour roast it 1-2 minutes add milk ,Italian herbs,oregano,chili flakes,1 pinch salt and cook2minutes till sauce look little thickness consistency.
Step 5 –Heat another pan add 1 tbsp oil add finely chopped garlic saute it add bell papers saute it in high flame add red chili flakes,salt add white sauce mix it add boiled Farfalle mix it add cheese cook 1-2 minutes till cheese melt remove from heat and add oregano,mix Italian herbs,red chili flakes serve hot!!!
