Frankie is popular breakfast/healthy meal in Maharashtra India. Frankie is made with wheat flour bread/roti and filled with stuffing.It can make many variations in its stuffing.
- Whole wheat flour- 1 cup
- All purpose flour -1/2 cup
- Salt – 1/2 tsp to taste
- Cooking oil-1 tbsp
- Red chili flakes – 1/2 tsp
- Coriander leaves – 1 tbsp finely chopped
- Cumin powder- 1/2 tsp
- Onion-1 tbsp chopped
- Garlic-3-4 finely chopped
- Tomato sauce-1 tbsp
- Cottage Cheese-1 cup cube(homemade)
- Yellow,red,green bell paper(mix)-1 cup finely chopped
- Mozzarella block cheese-20 gram
- Iceberg lettuce-2-3 leaves
- Cooking oil-2 tbsp
Step 1 – Take both flour in a bowl, add 1 tsp oil, salt and make soft,smooth dough with water (knead 10 minutes),cover it and keep aside for 20 minutes.
Step 2 – Heat nonstick pan add 1 tbsp oil add chopped garlic saute it 1 minutes add onion saute it,add cumin powder,salt,red chili flakes,tomato sauce mix it add bell paper saute it add cottage cheese mix well cook 1 minutes then remove from heat cool it 3 minutes then add coriander leaves mix well keep aside.
Step 3 – Take lemon size ball from dough dust with little flour and roll out with the help of rolling pin make 6 inch circle(similar to roti)
Step 4 – Heat nonstick tava(griddle) place roti cook till golden brown spot appear on surface turn it cook other side same way,drizzle 2-3 drops oil and cook both side 1 minutes.Put little shredded lettuce on top of roti,then put2 tbsp stuffing,put 1 tbsp grated cheese roll it tightly and cook 1-2 more minutes so cheese will melt,wrap in aluminum foil and serve hot.
