Black eyed beans/Lobia with cottage cheese, spices stuffed paratha is rich in fiber,protein ,full of nutritious value with great taste. It can eat breakfast/lunch/dinner any time.
- Whole wheat flour-2 cup
- Black eyed beans/lobia-1 cup
- Cottage Cheese-1 cup grated
- Garlic -3-4 cloves grated
- Salt – 1/2 tsp to taste
- Black paper powder – 1/2tsp
- Cumin powder – 1/2 tsp
- Chaat masala – 1/2tsp
- Coriander leaves-2 tbsp finely chopped
- Cooking oil/butter/ghee – 2 tbsp
Step1 –Take black eyed beans/lobia wash and soaked 2 hours then pressure cook 2 whistles . Cool it completely,keep aside.
Step2-Heat nonstick pan add grated garlic saute it add beans and all spices mix it add cottage cheese cook 30 seconds ,remove from heat add coriander leaves mix , cool it completely,keep aside.
Step3-Take flour in a bowl, add 1 tsp oil add little water make smooth dough cove it keep aside for 15 minutes.
Step4 – Take lemon size ball from dough,put 1 tbsp stuffing on center close it proper,dust little wheat flour on rolling board and roll it with the help of rolling pin,make round disc ( use fork/ knife press the edges ,it is optional but it makes paratha puffy when cook so do not missed it) .
Step5– Heat nonstick pan place paratha on it and cook in medium flame, drizzle little oil /butter turn it. Cook both sides of paratha till it becomes golden brown and crispy. Make all paratha similar way.
Serve Stuffed beans Paratha with Curd/Raita.
