Pita bread with Falafel and hummus)

Pita bread (Arabic bread) soft,pocket,Falafel is a deep fried ball made with chickpeas and spices , Hummus  mashed chickpeas dip popular Middle Eastern street. food


For Pita bread

  • All purpose flour-1 cup
  • Yeast-1 tsp (instant)
  • Salt – 1/2 tsp
  • Sugar – 1 tsp
  • Olive oil-2 tbsp
  • Water – 3/4 cup(warm)

For Falafel-

  • Chickpeas-1 cup(washed and soaked in enough  cold water for 15-16 hours)
  • Cilantro-1cup
  • Onion-1 roughly  chopped
  • Garlic-2-4 cloves
  • salt-1/2 tsp
  • Green chili-2
  • Coriander seed-1 tsp
  • Black paper -1/2 tsp(crushed)
  • Cumin seed-1 tsp
  • Olive oil-1 tbsp
  • lemon juice-1 tbsp
  • All purpose flour-1 tbsp
  • Semolina-1 tbsp
  • Cooking oil-for deep frying

For Hummus-

  • Chickpeas-1 cup(Soaked in cold water for 5-7 hours)
  • lemon juice-2 tsp
  • olive oil-1 tbsp
  • garlic-3-4 clove
  • sesame seed-1 tbsp
  • Cumin powder-1 tsp
  • Red chili powder-1 /2 tsp
  • Green chili-1-2
  • Cilantro-1/2 cup


Step 1 – In a bowl take  warm water, sugar and  mix it then keep aside 5 minutes.

Step 2 – Take flour in one bowl add yeast mixture,add salt then mix it and knead for 5 minutes. Add olive oil and kneed for 10 minutes, cover dough and keep aside for 1 hour.

Step 3 – After 1 hour open dough will be rise and double-triple in size, punch it and kneed 2-3 minutes, cut it and make small ball, cover it,keep aside for 30 minutes.

Step 4 –Take  ball and gentle pat with fingers make 6 inch circle 1 /4 inch thick,even thickness flat disc(do not make thick otherwise it will not puffed up) and cover it for 10 minutes.

Step 5 – Preheat oven to 350f/180c for 10 minutes. Place pita on baking tray and bake it for 3  minutes,then turn and bake3-5minutes  till pita bread fully puff up.take out and keep aside ,cool it  break bread in half and open the pocket for stuffing.

Step 6 –Take soaked chickpeas in grinder grind it without water,add all spices ,onion,lemon juice and grind again make it as possible as fine paste.

Step 7 –In chickpeas paste add salt flour and semolina mix well and cover it keep in refrigerator for 2-3 hours  so ball will make perfect round and give perfect texture.After 3 hours take out  chickpeas mixture and make lemon size ball from it ,keep aside.

Step8-Heat oil in a pan ,slide ball in hot oil and cook in low medium flame for 10-12 minutes till golden brown in all sides  once Falafel are fried remove from oil and keep in kitchen towel.

Step9-Take soaked chickpeas in pressure cooker and give4-5 whistles ,and cook in low flame for2minute remove from heat and cool it.

Step10-take cooled chickpeas and all spices in grinder make fine paste  add olive oil mix well ,garnish with little olive oil and red chili powder keep aside.

Take half pita bread place  2 Falafel,hummus,pickles,tahini and salad up on your choice enjoy  it.


  • Resting period is very important for pita bread do not avoid it.
  • Adding of lemon juice and semolina in Falafel absorbs less oil and gives good crunchy crust to Falafel soft,fluffy,bright green on inside.
