Kothimbir Vadi – Maharashtrian Recipe

Kothimbir Vadi is very famous and healthy Maharashtrian fritters; which is made by Kothimbir(Coriander leaves), gram flour  and spices. Roasted peanut, sesame seed, grated coconut gives it nutty flavor and juggary, tamarind, spices combination gives perfect sweet-spicy-tangy flavor. This is perfect for tea time snack.


  • Gram flour – 1cup
  • Coriander leaves – 1cup finely chopped
  • Mustard seed – 1/2 tsp
  • Sesame seed – 1 tsp
  • Ginger garlic paste – 1 tsp
  • Juggary – 1 tsp (Optional)
  • Coconut – 1 tsp grated
  • Cumin powder – 1/2 tsp
  • Tamarind pulp – 1tsp (Optional)
  • Green chili – 1/2 tsp finely chopped
  • Peanut – 2 tbsp roasted & crushed
  • Turmeric powder – 1/2 tsp
  • Cooking oil  – 2 tbs
  • Salt – 1/2 tsp  (As per taste)


Step1 – Heat nonstick pan then add 1 tbsp oil  then mustard seed. When seed crackle, add ginger garlic paste, all spices, juggary, tamarind pulp and mix it properly. Cook it for 30 seconds. Add chopped coriander leaves then mix it. Add gram flour and mix it. Cook it for 1 to 2 minutes then add 1/2 cup water and mix it properly. Cook it till it absorbs all the water and turn into the form of dough consistency. Once done switch off the flame.

Step2 – Spread dough mixture on greased plate/butter paper  flatten it with spatula.Let it cool for 10 minutes then cut it into any shape of your choice.

Step 3 – Heat nonstick  pan add oil then  fry it  till  get becomes crispy & golden brown.

Serve with garlic,chili chutney.


– You can choose shallow/deep fry.

-You can also  mix all ingredients and pour batter into bowl and cook in microwave for 4 to 5 minutes then cut it and fry or  take batter and steam it like idli then fry it.
