Gajar halwa is very delicious and perfect for any festival to offer to God. It is very easy to make .When Gajar halwa is mix and cook with khoya it’s test is super delicious. It is top list on party /wedding menu card. Carrot/Gajar halwa is served hot or cold both are mouth melting.
- Carrot/Gajar – 2 cup fresh grated
- Milk – 1/2cup
- Sugar – 3 tbsp
- Mawa – 1 cup(Homemade)
- Saffron – few threads
- Cardamom powder – 1/2 tsp
- Pistachio – 1tbs finely chopped
- Almond – 4 to 5 finely chopped
- Cashew nut – 5 to 6 finely chopped
Step 1 – Heat non-stick pan then add ghee, cashew nut and almond then saute for 30 seconds and keep aside. Add grated carrot and cook for 10 to 15 minutes until mixture become dry then add milk and cook 5 -10 minutes until mixture become dry.
Step 2 – Mix saffron and milk keep aside.
Step 3 – Add cardamom powder, mawa, saffron and mix it proper. Cook it for 8-10 minutes in medium flame. Remove from heat and garnish with pistachio,and fried almond, cashew nut.
Serve hot or cold.
NOTE – I have used orange carrot but you can also use red one also.
