Indian traditional sweet originated fro Rajasthan,India.Kalakand is grainy texture,cardamom flavored sweets, made from fresh milk and cottage cheese.Kalakand can store in fridge for 2-3 days.
Ingredients (For 8 to 10 pieces)
- Sugar –3 tbsp
- Milk -2 liter
- Cottage cheese/Paneer – 1 cup(crumbled)
- Cardamom powder – 1 tsp
- Rose water – 1 tsp (Optional)
- Pistachio – 3to 4 finely chopped
- Ghee – 1tsp( for grease)
- Saffron – some strands
Step 1 – Take milk in big thick bottom/nonstick pan and boil it, adjust flame and cook milk until it get thick(1/3 of original volume). Stir it with regular interval.
Step 2 – Add cottage cheese mix very well.
Step 3 – Add sugar and cook more 10 minute until mixture thick and almost dry. Add rose water, cardamom powder, saffron then mix it very well then remove from heat.
Step 4 – Grease any plate and pour Kalakand mixture,garnish with pistachio and press with the help of spatula. Keep aside for 30-45 minute.
Step 5 –After 45 minute slice, cut to burfi size with large knife.
NOTE : Reduce milk proper and stir it regular interval.
