Spinach is high in fiber, protein, iron, vitamin and folate. It regulates blood pressure,boost immune system and also good for brain.
- Spinach leaves – 2 cup
- Green chilies -2
- Lemon juice – 1 tsp
- Cardamom – 2 to 3
- Garlic- 3 to 4cloves
- Cumin seed – 1 tsp
- Black paper powder – 1 tsp
- Basmati rice – 1 cup
- Cooking oil – 2 tbs
- Salt-1tsp (as per taste)
- cashew nut – 8 to 10
- Potato – 1/2(optional)
Step 1 -Wash and soak rice for 30-45 minute.
Step 2 – Take pan add 3 up water boil it .In boiling water add chopped spinach cook 1-2 minutes,remove from heat and wash with cold water.
Step 3 – In grinder take spinach,green chili, garlic, coriander leaves and make fine puree.
Step 4 – Heat oil in a nonstick pan fry cashew nut and sliced potato keep aside.
Step 5 – In this hot oil add cumin seed,cardamom then add spinach paste saute 2-3 minute then add black paper powder mix it and add soaked rice,salt and2 cup water mix it, while water boil cover it and cook in low medium flame for 7-9 minutes.
Step 6 – After 7 minutes open lid and check rice absorbed all water then switch off flame and add lemon juice cover it for 10 minutes. After 10 minute garnish with fried cashew nut and fried potatoes.
- Do not stir rice, it will break.
- For maintain green color of spinach , quickly hot spinach wash with cold water.
- Lemon juice also maintain green color of spinach so add in last.
